Mashhadi's Digcheh is a delicious, traditional and local dessert for the city of Mashhad. Digcheh , an occasionally dessert, and it is also known as a popular vow during Ramadan, Muharram.

Digcheh is similar to Rice pudding but with some important differences, it should be roasted and baked kernel and for that purpose, they infuse sugar, saffron, rose water and cardamom in milk. In short, the Digcheh is a fragrant and sweet saffron coat that is used instead of water from the milk and the bottom of the pot is popular.
To bake the Digcheh , you should allow the rice to soak two to three hours in the water. Then drain the water. Pour the ingredients into the pan, add some milk, cook over medium heat, stirring constantly, and gradually add milk. Hold some milk to add sugar and cardamom. When the rice is well cooked, add the sugar and cardamom and add the rest of the milk and Allow the sugar to dissolve well in the rice (at this point in the cooking process, taste a few ingredients to add some sugar if you have low sugar depending on your taste). Finally, when the ingredients are firm paste, add the rose water and stir for a while, then lower the pan, reduce heat to low for one hour. After this time, pour the Digcheh into your favorite dish and decorate it with pistachio powder.
